The Artisan #8 by Choni Song

60ml Chai tea-infused rum
30ml Cream sherry
30ml Lemon juice
20ml House made orgeat syrup
Cream cheese foam*

Shake all liquid ingredients and serve in the paper cup with ice. Top with cream cheese foam and flame half with a torch. Sprinkle a bit of matcha powder to garnish.

*Cheese foam (for six to eight drinks): Combine 250g light cream, 50g milk, 4g of sea salt, 10g icing sugar, 5g cream cheese powder, 3g matcha powder. Whip with an electronic egg whisk until foamy.
